Providing for yourself in the big city is stressful enough as it is. These are some easy recipes I use myself everyone can try without being a master chef.

Dutch Baby
A sweet breakfast puff that’s cooked in the oven.
- Preheat oven to 450
- Mix 4 eggs, 1 cup milk, 1 cup flour, a sprinkle of baking powder and salt, 2 caps of vanilla in a
bowl.
- Melt 4 tsp. (1/2 a stick) butter in pan until light brown.
- Pour batter into a baking pan and put in the oven for 15 min.
- Turn down to 350 and cook for an additional 10 min.
- Sprinkle powdered sugar and serve!
Coconut Curry chicken
A classic, easy, healthy, and delicious dish.
-Cut two chicken breasts into cubes. Cube 1 whole bell pepper, a half an onion, 5 thin slices of ginger, 3 small potatoes, and garlic on the side.
-Saute the vegetables in olive oil and 2 tsps. of sesame oil. Add in a whole can of coconut milk. Add 3 tsps. of curry. Stir well until is a golden yellow.
-Add the cubed chicken and stir. Cover pot with lid. Turn the heat to a medium-low flame and let simmer for 12-15 minutes.
-Serve with delicious jasmine rice.
Lemon bars
For this recipe it is best to set a stick of butter out ahead of the time you plan to bake.

-Preheat to 350 degrees and lightly oil an 8x8 baking dish
-Mash a cup of flour into a full stick of butter with the back of a spoon to make a thick paste. Add a ¼ cup confectioners, ¼ tsp. of vanilla extract, ¼ tsp. of salt. Continue to mash until it looks like a soft crumbly cookie dough.
-Wet your hands and press the dough into the bottom of the 8x8 dish and poke holes evenly over the crust. Bake in the oven until slightly golden brown, for about 22 minutes.
-Beat 2 whole large eggs and 1 large egg yolk in a bowl. Mix in a cup of white granulated sugar and 2 tbsp. of flour until smooth. Add 1/4 cup of lemon juice and 1 tbsp. lemon zest and whisk for 2 minutes. Pour over the baked crust.
-Bake in the oven until the custard has set, and has a thin white sugary layer for about 25 minutes. Once, out of the over let cool undisturbed. After cooled run your knife until very water and cut around the edges of the lemon bars with the hot knife, and then into squares. Dust with confectioners sugar on top and serve!!
Homemade wontons
This makes about 20 dumplings.

-Mix chopped a half of an onion, 2 tsp. black pepper, and a cup of cilantro into a half a pound of ground beef thoroughly with your hands. Mix well until everything is distributed evenly.
-Take a packet of wonton skins (I get mine from the asian supermarkets in Chinatown) & fill the middle of each dumpling with about a spoonful of the seasoned ground beef. Squeeze the wonton skins in half and stick together
-Bring water to a boil. Season water to your liking for the soup. I usually put ginger and peppers with a splash of sesame oil. Drop the wontons in and cook for 8 - 10 minutes.
-Freeze unused dumplings in freezer.
Buttermilk breaded chicken tenders

-Mix 1 cup of buttermilk milk with 1 ½ tsp of salt, ¼ tsp of cayenne pepper, ¼ tsp of garlic, and ¼ tsp of paprika. Cut 2 pounds of chicken tenderloins into strips.
-Soak the cut chicken pieces in the mixture for 5 - 10 minutes.
-Mix 1 ½ cups of all purpose flour, 1 rounded tsp of salt, ¾ tsp of black pepper, ¾ tsp of garlic powder, ¾ tsp of paprika, 1 ½ tsp of baking powder, and 3 tbsp of buttermilk. Roll the marinated chicken pieces in the breading mixture.-To fry the chicken, use about 3-4 cups of vegetable oil in a deep pot and fry each piece until the chicken tenders are crispy golden brown.
